Hey y'all! How was your weekend? I wrapped up a class on Saturday so it was nice to have Sunday with no homework hanging over my head. Work should be busy, but good this week and I am looking forward to the Chancellor's Breakfast on Wednesday and then in two weeks it's the long Labor Day weekend - yay! Here's a peek into life lately around these parts...
Hooray for barre! I made it to four classes this week which makes me feel good. The studio started the new Empower classes this past week and I have been loving them. More cardio-centric than the classic class, it has been getting my heart rate up!
One of our favorite things to eat around here are Brussel sprouts! We love them. We roast them the same way we roast everything else - 415 degree oven, toss in olive oil, garlic salt, and pepper. Roast for 15 minutes on each side. Phillip makes a honey dijon/balsamic vinaigrette to go with them and it's delicious.
Some nights we both end up working late and we like to have a back up plan for dinner so we aren't tempted to eat out or grab something to go. These turkey meatballs heat in the microwave in minutes; pair it with whole wheat pasta and your favorite sauce and you are ready for dinner! Our favorite sauce is the creamy tomato basil from Trader Joe's.
I finished Babyland this week. It was ok. Not my favorite book. It was very cliched. Oh well, on to book 27 in my 50 book challenge. This one, Behind Closed Doors, is good. Very good. I can't wait to get deeper into it.
I have been making a lot of herbal tea with our new electric kettle. I don't know why I waited so long to get on the electric kettle train. I talk about ours and my other kitchen favorites in last Friday's post.
Um, y'all. We have walls! The dry wall is all up. I'm hoping this week they finish the texturing and start on the exterior brick #fingerscrossed.
I pack my lunch almost every day for work, unless I have a lunch meeting. I have recently discovered the Trader Joe's Thai Sweet Chili Veggie burgers, and y'all they are so delicious. They're individually wrapped so they're easy to grab out of the freezer and stick in my lunch bag. I usually add leftover roasted veggies from the night before, yogurt with a little granola, and a piece of fruit. If I'm not doing a smoothie for breakfast I'll also throw in a Quest Bar. As a side note, I love Ikea's plastic storage containers. Inexpensive, tons of sizes, washes easily, dishwasher safe. Perfect.
More barre! 4:40am comes early but it is so so worth it.
Friday night we were off to Garland to see Phillip's dad in a production of Into the Woods. I had never seen this particular musical before and the production was great. The whole cast did such a wonderful job (especially Phillip's dad). I grabbed this dress the last time we were at the outlets, so I don't have a link for it, but I've linked to something similar. I wanted to be casual since it was a church production, but I also wanted to look put together. We had a great time.

Saturday morning we had our usual errands. It was going to be hot so I wanted to be cool, but also cute and put together. I am a huge fan of these drawstring chambray shorts from J. Crew Factory. They have been my favorite shorts this summer and they pair perfectly with this Lou & Grey off the shoulder tee. I paired it with rose gold and bronze jewelry for this easy summer outfit.
Saturday afternoon I had planned to run a couple of errands. I walked down to the trash room to drop something off and walked into the garage and then thunk. All of the lights went out. Let me tell you, there is nothing creepier than a totally silent, dark parking garage. And I was kind of stuck. I couldn't get my car out. The gates are supposed to go up in the event of a power outage, but they didn't. And I couldn't immediately get back inside because the fob sensors were off (no power). So I hung outside in the 100 degrees for a bit. Finally after an hour the maintenance guy was able to open the garage gates and I could get my errands done. After that, an iced coffee from Dunkin Donuts was in order.
On Sunday, the amazing Kelly taught an Empower class at Pure Barre. Oh it was good. There's nothing better than leaving a class just dripping sweat. I will never be one of those people who can work out at lunch. I got a great work out in on Sunday though. #ilovepurebarre
Cooking, some house chores, some reading, and some wine. Sunday afternoon and evening was nice and quiet. And I enjoyed some rose in my wine glass. We are just 69 days away from the wedding! Can you believe it??? I can't. It is coming up so so fast.
