Life Lately

Happy Monday Y'all!  The last couple of weeks have been a bit of a whirlwind with two work trips.  Summer hours end this week and I am ready to go back to normal 8-5 hours.  So what have we been up to lately?





So I recently discovered Poshmark.  On the left side of the blog you can see the link to my items.  It's a great website/app where you can sell items you no longer want or use.  I've sold a few wallets and purses as well as some dresses and tops.  Some of which I've never worn and still had tags.  I've also brought stuff to Clothes Mentor, but I find I make more using Poshmark.




Two weeks ago I was off to Austin for a work meeting.  I've been to this meeting probably 5 times now and the food options at break time are never very good.  I wanted to make sure I ate as well as I could so I packed a couple of these kind bars for snacks.  I also avoid the breakfasts by bringing Quest protein bars.




The meeting is generally an update from the Texas Higher Education Coordinating Board and includes any rules changes or items to be discussed in the upcoming legislative session.  Riveting, I know.  What is always nice is to be in the same room for 2 days with your peers to hear how they are tackling the same issues you are. #winwin

I've never really been a camo person, but fell in love with the pairing of the camo tee with the white jeans.  Such a cute outfit to run errands in.  It's definitely one of my new favorites.




Typically before I leave for a trip, Phillip and I go out to dinner.  Saturday night is our usual date night and we headed out to The Ranch.  We never order an appetizer, however the fried green tomatoes jumped out at us, so we skipped the alcoholic beverages and went for the appetizer instead.  It did not disappoint.  The breading on the tomatoes was so light, it didn't feel heavy or greasy.  For dinner, he opted for the chipotle meatloaf and it was so delicious.  I went with the sausage and goat cheese flatbread and thought it was very tasty too.




The next day it was off to Albuquerque for another work meeting.  This one is a yearly meeting for those individuals in education who work with veteran students.




Such topics include things like refunds and debts when a student withdraws from school or drops a class.  There are so many rules, it is not an easy process at all.


When you are out of town and committed to staying in shape, you bring the workout gear.  I hit the treadmill for a run one two of the days I was there and also had brought my resistance bands and dvds with me.


 I appreciated the workout options after a colleague and I had dinner at this place.  El Pinto had such delicious food.  I think it was my favorite meal of the week in Albuquerque.  Becki opted for ribs and I went for the pork tamales with chili.  The chips and salsa were the best I've had at any restaurant and they had this really cute back seating area where they had live music.  If you are ever in ABQ, you should definitely check it out.

And not to gross anyone out or anything, but for real none of the stalls at the convention center had toilet paper holders.  #whatwhyhow
 
 


I hopped on a plane for the 1.5 hour trip home on Thursday.  I like attending conferences because I always learn so much but it's always a good feeling to come home. 
 
 


Thursday night we relaxed on the couch and Kate took her customary spot next to me on the couch.  Never in my lap, because why not.  She likes to sit next to me with her front legs dangling over the edge.
 

 On Friday, I had a girls' day with this cutie.  She's one of Phillip's nieces.  She's five and I let her pick lunch so of course we ate at McDonald's.  i figured it was going to be that or Chik-fil-A.  #fiveyearoldpriorities.  
 
 
Then we went to the movies and wandered around for a bit before she had her nails and toes painted.  It was an exhausting day I'm sure as she talked the entire time until she fell asleep in the back seat on the way home.




Saturday we had a party at a friend's house during the afternoon and afterwards we stopped in Southlake for dinner at a restaurant I have been wanting to try for weeks.  If you get the chance, check out Lolo's Chicken and Waffles.  Oh. My. Goodness.   I can't even describe the deliciousness.  The chicken was fried to perfection and was not heavy or greasy.  It paired perfectly with the waffles and syrup.  I've always been a bit dubious of the combination, but boy was I wrong.  Go eat there!
