Y'all. It's the end of July already. Holy Cow! Summer is just about over. I'm looking forward to fall and winter, I'm itching to break out my sweaters and boots. Since it's the end of the month, that means it's time for What's Up Wednesday.
What We're Eating This Week
Veggie burritos on Monday. I'm irrationaly excited about these. It's a Cooking Light recipe and they freeze really well. These are burritos we made a couple of weeks ago. Tuesday we're having pork tenderloin with cauliflower rice and broccoli. Wednesday is fish and cauliflower night. Thursday we're doing salad with chickpea burgers and Friday is turkey burger night. This week we're making Shay's Caprese Burgers. It's a favorite around here.

Summers with these people. My cousins. I cannot even begin to decribe how lucky I am to have the family that I do. Growing up, my summers were spent in the backyard swimming and playing with my cousins and just spending time with family. What's better than that? And for reference, that's me in the upper left.
What I'm Loving
This sale. This is the time of year that Nordstrom puts some of their new Fall items on sale. It's not clearance, it's a sale on their new stuff. If you haven't checked it out yet, you have a little more time left, but shop quick as stuff is going fast. I did a whole post on my favorites from the sale that you can find here.
What We've Been Up To
Celebrating July 4th! We had a great day, relaxing and enjoyable, and we got to see fireworks over Lake Carolyn.

I also got to hang out with the fam and we saw The Secret Life of Pets - go see it! It's super cute. I recently saw it a second time and saw a few things I missed the first time around.
We've also been finalizing some wedding planning and other travel plans for the upcoming months. We successfully hired 1) a photographer 2) a DJ and we're about to finalize the officiant. Yay!
What I'm Dreading
Nothing! There is too much going on to be excited about to dread anything right now.
What I'm Working On
I'm working on some things for work. I got the green light to hire an Assistant Director of Admissions. I cannot wait to have this person hired and in the office. It is going to make such a difference in my ability to get work done not having to deal with a lot of the day to day issues in the office and having the chance to focus on projects and processes to help the office continue to grow and thrive in support of my institution's goals. Disney! We got our park passes a couple of weeks ago and have set up our fast passes and dinner reservations. I've already started to plan my wardrobe. Lots of tees, tanks, and shorts. And my Skechers. #mostcomfyshoesever
What I'm Watching/Reading
We recently discovered Stranger Things on Netflix and it so so good. We watched two episodes Saturday night and are looking to finish the last six.
I will also admit to waiting impatiently for football season to start...

I have always been fascinated with true crime and have read my fair share of true crime novels so when I discovered this podcast, I knew I had discovered something good. If any of you watch the Cooking Channel and watch Unique Sweets, you'll recognize Georgia Hardstark. She and Karen Kilgariff started the My Favorite Murder podcast to talk about true crime.

What I'm Doing This Weekend
Friday is my last Summer Friday off. I'm excited to get back to normal hours but I am also looking forward to savoring that day off. I have a facial scheduled so I'll probably grab lunch at Brio while I'm in Southlake. Friday night I'm going to see Bad Moms with the girls and then Saturday night I think Phillip and I are going to see the new Star Trek movie.
What I'm Looking Forward to Next Month
Michelle's wedding! Yay! I am looking forward to a weekend in my hometown my family celebrating my cousin's marriage. #manconesloveawedding
What Else is New
Getting ready to address and send out the Save the Dates for the wedding; I'm trying to read more; looking for a potential house to rent #weareoverapartmentliving.

Oh my gosh, I have to pick one? I'd have to say the movies - the movies this summer have been really good and it's not over yet. Hitting up Bad Moms and Star Trek this weekend and Suicide Squad too.
