Thursday Recipe

It's been rainy and damp here for what seems like forever. These spice drop cookies are the perfect remedy for a dreary day.

Ingredients

1/2 cup reduced calorie margarine, softened
1/2 cup unpacked brown sugar
1 large egg
1 tbsp vanilla extract
2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp table salt
1 tbsp pumpkin pie spice
1/4 cup powdered sugar

Instructions

1. Preheat oven to 375 degrees.
2. In a mixing bowl, on medium speed, beat margarine with brown sugar until creamy.
3. Add egg and vanilla extract; beat until light and fluffy.
4. Stir in flour, baking soda, salt, and spice.
5. Roll rounded teaspoonfuls of dough into powdered sugar to coat.
6. Place onto baking sheet.
7. Bake until golden, about 7 to 8 minutes.
